Jaime & Ramiro’s Drunken Salsa
- ½ cup vegetable oil
- 6 Pasilla chiles, destalked, peeled and deseeded
- 1 Cup Seville orange juice
- ½ teaspoon salt
- 2oz white onion, thinly sliced
- ½ cup Cotija cheese
Heat the vegetable oil in a frying pan. Add the chiles and fry over medium heat until browned all over. Remove from heat, remove excess oil with kitchen paper and set aside.
In a molcajete or blender, grind the fried chiles, Cojita cheese and salt into a fine paste. Add the orange juice to dilute the paste and mix until you have a slightly-thickened salsa. Set aside.
Heat 1 spoon oil in a frying pan. Add the onion and cook over medium heat until transparent. Add the salsa and cook for 5 minutes or until it loses its raw taste. Remove from heat. Add salt to taste and set aside.
