Jaime & Ramiro’s Drunken Salsa

Ingredients

  • ½ cup vegetable oil
  • 6 Pasilla chiles, destalked, peeled and deseeded
  • 1 Cup Seville orange juice
  • ½ teaspoon salt
  • 2oz white onion, thinly sliced
  • ½ cup Cotija cheese

Instructions

Heat the vegetable oil in a frying pan. Add the chiles and fry over medium heat until browned all over. Remove from heat, remove excess oil with kitchen paper and set aside.

In a molcajete or blender, grind the fried chiles, Cojita cheese and salt into a fine paste. Add the orange juice to dilute the paste and mix until you have a slightly-thickened salsa. Set aside.

Heat 1 spoon oil in a frying pan. Add the onion and cook over medium heat until transparent. Add the salsa and cook for 5 minutes or until it loses its raw taste. Remove from heat. Add salt to taste.
