Tomatillo & Root Beer Plant Salsa
- 2 roasted garlic cloves, peeled
- 1 teaspoon salt
- ½ teaspoon hoja santa (root beer plant), finely chopped
- 4 roasted green serrano chiles
- 1 pound broiled tomatillos, peeled
In a molcajete or blender grind the garlic, salt and hoja santa into a fine paste.
Add the chiles and tomatillos and grind until the mixture is coarsely puréed.
Season to taste with salt.
Serve in a sauce boat at room temperature.
