Tomatillo & Root Beer Plant Salsa


  • 2 roasted garlic cloves, peeled
  • 1 teaspoon salt
  • ½ teaspoon hoja santa (root beer plant), finely chopped
  • 4 roasted green serrano chiles
  • 1 pound broiled tomatillos, peeled


In a molcajete or blender grind the garlic, salt and hoja santa into a fine paste.

Add the chiles and tomatillos and grind until the mixture is coarsely puréed.

Season to taste with salt.

Serve in a sauce boat at room temperature.
