Manzano Chile Salsa


  • 17oz ripe tomatoes
  • 5 red or green Manzano chiles
  • 1 cup water
  • 1 ½ tsp salt


Place the ingredients in a saucepan with the cup of water. Cook over medium heat for 15 minutes or until soft. Remove from heat. Place the tomatoes, chiles and water in a molcajete or belder and grind into a roughly puréed salsa. Add salt to taste.
Serve at room temperature in a sauce boat.
